Cheesy Garlic Biscuits

1. Heat minced garlic in a little Earth Balance Butter over low heat. I like A LOT of garlic so I used an entire head. Use as much or as little as you like. Once soft enough, smash with a fork. Remove from heat.
2. Add 3/4 C. almond milk and 1/4 C. Earth Balance vegan butter to the garlic pan, scraping bottom of pan to remove any stuck pieces of garlic, until the butter is melted. Remove from heat and set aside to cool.
3. Stir together the biscuit mix and as much Daiya Vegan Cheddar Cheese as you like. I used a handful.
4. Once garlic, milk and butter mixture has melted and cooled, add to the flour and cheese. (I also cooked a whole jalapeno, chopped and seeded to the garlic mash.)
5. Spoon biscuits onto baking sheet and brush tops with butter (or garlic butter if you prefer). When I cook plain biscuits, they’re usually ready around in 15 minutes but with the cheese, I like to bake these around 18-20 minutes.
You can add Old Bay Seasoning but be careful of the salt content because of the cheese and butter.
Making Litelife Gimme Lean Sausage biscuits with the leftovers the next morning remind me of the Bisquick sausage and cheese balls that I ate as a kid.
Thank you so much for making such amazing products. I’ve tried the biscuit mix and the pancake/waffle mix and love them both. Have purchased the French Toast mix but haven’t tried it yet. I’ve also made biscuits and gravy with ‘Creamy White Gravy Mix by Vegetarian Express’ and ‘Litelife Gimme Lean Sausage’. Fool a hardcore NON-vegan that eats biscuits and gravy at Hardees several times a week. And also made the biscuits with ‘Creamy White Gravy Mix by Vegetarian Express’ adding some ‘Butler Chik-Style Seasoning’ to the gravy and served with Gardein Seven Grain Crispy Chicken Tenders and sautéed kale. Fooled another hardcore NON-vegan and hunter!
