Cashew and Pine Nut Parmesan

CashewsYou will not believe how tasty this stuff is. You can use it on everything from pasta to Tofurkey sandwiches – or you can put some in the palm of your hand and just try to stop eating it!

Cashew/Pine Nut Parmesan

  • 3 C. raw cashews, soaked for one hour, drained and rinsed
  • 1/4 C. pine nuts
  • 2 cloves garlic
  • 3 Tbsp. nutritional yeast
  • 2 tsp. sea salt
  1. Combine cashews, pine nuts and garlic in a food processor and process until finely minced. (Processing it into a paste will make it harder to work with)
  2. Add nutritional yeast and salt and combine thoroughly.
  3. Spread mixture on dehydrator trays. Dehydrate until dry and crumbly (~12 hours) at 110 degrees.

Keep refrigerated between uses.
