Cashew and Pine Nut Parmesan

You will not believe how tasty this stuff is. You can use it on everything from pasta to Tofurkey sandwiches – or you can put some in the palm of your hand and just try to stop eating it!

Cashew/Pine Nut Parmesan
- 3 C. raw cashews, soaked for one hour, drained and rinsed
- 1/4 C. pine nuts
- 2 cloves garlic
- 3 Tbsp. nutritional yeast
- 2 tsp. sea salt
- Combine cashews, pine nuts and garlic in a food processor and process until finely minced. (Processing it into a paste will make it harder to work with)
- Add nutritional yeast and salt and combine thoroughly.
- Spread mixture on dehydrator trays. Dehydrate until dry and crumbly (~12 hours) at 110 degrees.
