Vegan Baked Peach French Toast
Like other baked French toast recipes, this one suggests doing the prep the night before baking and serving. Don’t despair, though, if you want it now – just go for it!

Ingredients
- 1 C. brown sugar
- 1/2 C. vegan butter
- 2 Tbsp. water
- 29 oz can sliced peaches, drained, or enough fresh peach slices to thickly cover bottom of 9″ x 13″ pan
- 12 slices day-old French bread, or4 slices sandwich bread, toasted and cut in half
- 3/4 C. Mom’s Vegan Kitchen French Toast Mix
- 1-1/2 C. non-dairy milk
- Cinnamon sugar, to taste

Directions
Bring sugar, butter and water to boil in a small pan. Reduce heat and simmer for 10 minutes.

Spread mixture on the bottom of a 9″ x 13″ baking dish. Top with the peaches.

Cover peaches with the slices of bread.

Whisk together the French Toast Mix and non-dairy milk and pour over the bread and peaches.

Refrigerate 8 hours or overnight.
The next day:
Remove from refrigerator 30 minutes before baking. Preheat oven to 350 degrees.

Sprinkle the top with cinnamon sugar to taste.

Cover with aluminum foil and bake for 20 minutes. Remove foil and bake another 25 minutes or until golden brown on top.

For each serving, place bread upside down on plate and spoon peaches over.
