Vegan Cheesecake French Toast
Delicious for breakfast, brunch or dessert — making cheesecake has never been easier!
As always, Mom likes white sandwich bread, but encourages you to use your imagination.

For each serving you will need:
- 2 slices toasted sandwich bread
- 2 Tablespoons vegan cream cheese
- 1/2 teaspoon sugar
- 1/2 teaspoon lemon juice
- 1/4 teaspoon vanilla extract
- graham cracker crumbs
- sliced strawberry
French toast batter:
- 2 Tablespoons Mom’s Vegan Kitchen French Toast Mix
- 4 Tablespoons non-dairy milk
- 1 teaspoon vegetable oil

1. Have ready French toast mix in one baking dish, graham cracker crumbs in another. Slice strawberries.

2. Stir cream cheese, sugar, lemon juice and vanilla extract together until smooth. Spread over 2 slices of toast and top with sliced strawberries, then put sides with filling together like a sandwich.

3. Coat both sides of sandwich with French toast mix.

4. Coat both sides with graham cracker crumbs.

5. Place on pre-heated, oiled griddle and cook until brown on both sides.
